The one formula you need
There is no mystery to how thick a paperback comes out. It is a single multiplication:
thickness (inches) = page count × paper factor
The paper factor is a fixed per-page thickness set by the printer. At the two most common print-on-demand platforms, the numbers are the same as each other:

That is the whole calculation. Plug in your final page count, multiply, and you have the physical thickness of the text block, which for a paperback is also the width of the spine.
The worked table
Here is what common page counts translate to in real inches, on both papers, using the factors above:

Two things jump out. First, cream is consistently thicker, and the gap widens as the book grows: at 800 pages the same manuscript is about two-tenths of an inch fatter on cream than on white. Second, thickness scales in a straight line with page count, so once you know your final page count the number is exact, not an estimate.
Why the number actually matters
This is not trivia. The thickness of your book drives four practical things.
1. Spine text legibility
A thin spine cannot carry readable text. As a rough guide, spines under about 0.25 inches are left empty by professional designers, because on a narrow spine the title drifts visibly with normal binding tolerance and an off-center spine reads as an error to anyone browsing a shelf. From the table, that threshold lands around 110 pages on white and 100 on cream. Below that, plan on a blank spine. Each printer also enforces its own minimum page count before it allows any spine text at all, so check your printer's rule alongside this rule of thumb.
2. Shelf presence
Thickness is what a browser sees edge-on in a bookstore or library. A book too thin to show a legible spine is essentially invisible on a shelf, seen only face-out. A book of healthy thickness announces itself from the side. This is one more reason very short books sometimes benefit from a smaller trim or slightly more generous typesetting: a little more thickness buys real shelf visibility.
3. Shipping weight
More pages and thicker paper mean a heavier book, and weight feeds directly into what it costs you to ship copies and, in some cases, into print cost. Cream's extra thickness is also extra weight. None of this is a reason to avoid cream when your book calls for it, but it is worth knowing that the paper choice touches the scale as well as the spine.
4. The cover wrap depends on it exactly
This is the big one. Your paperback cover is one flat file wrapping the back, spine, and front. The spine panel has to match the physical thickness of the printed book almost exactly, or the wrap misaligns and the file gets rejected. Because the spine equals page count times paper factor, any change to either number, a reflow that shifts the page count or a switch between cream and white, changes the spine and can break a cover that was already designed. Lock the page count and the paper before the cover is built, and the wrap is computed once and stays correct.
The hardcover exception
Everything above is paperback math. Hardcover is different and you should not use this formula for it. A hardcover case laminate cover adds the thickness of the cover boards on top of the text block, and printers compute hardcover spines from their own stepped tables rather than the per-page factor.
